apple chutney

i found this recipie at epicurious.com, but obviously, since i cant leave anything alone, i'm gonna mess with it.

4 apples, preferably granny's and macintosh, diced
1 1/2 c cider vinegar
1 1/2c brown sugar
1 red onion diced
2T fresh grated ginger (i'm using 1T ground) galangal sounds good too
dash hot pepper flakes
2T lemon juice
bay leaf
dash salt
1c raisins (i'm using 1/2c along with 1/2c dried cranberries) possibly apricots too.
1t pie spice - i have chai seasoning which is the same

combine, boil until thick.

  1. so i halved the recipie, using a quarter of a diced red onion, 1t ground ginger, 1/2t chai tea (pie spice will do), and all dried cranberries. it was AWESOME!!! like applesauce with a kick. it was great with the roast pork.
